Apple Cinnamon Baked Oatmeal

Make this naturally sweetened, perfectly spiced Apple Cinnamon Baked Oatmeal once and enjoy a delicious, cozy breakfast all week long!

Ingredients

  • 2 cups rolled oats
  • 2/3 cup chopped walnuts
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground nutmeg
  • 2 cups milk of choice (I used vanilla almond milk)
  • 1/3 cup maple syrup or honey
  • 2 large eggs
  • 1/4 cup melted unsalted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 2 large apples, peeled, cored, and chopped into 1/2-inch pieces (I prefer Fuji apples)
  • Additional maple syrup for serving, optional

Instructions

  1. Preheat oven to 350° F. Grease a 9-inch square or 2-quart baking dish and set aside.
  2. In a medium mixing bowl, whisk together oats, walnuts, cinnamon, baking powder, salt, and nutmeg.
  3. In a smaller mixing bowl, whisk together milk, maple syrup, eggs, butter or coconut oil, and vanilla until well blended. Pour the liquid mixture into the dry mixture and stir to combine.
  4. Arrange half the chopped apples evenly over the bottom of the baking dish, then pour the oat mixture over the apples. Scatter the remaining apples over the top.
  5. Bake for 42 to 45 minutes, or until the top is golden and the center is set. Let the oatmeal cool for a few minutes before scooping into bowls and serving with a drizzle of maple syrup.
