    Quick and Easy Black Beans

    Quick and Easy Black Beans

    This recipe turns canned black beans into a delicious side dish in no time. Enjoy alongside tacos or stuffed in a burrito. These beans are adapted from Isabel Eats.

    Ingredients

    Scale
    • 1 tablespoon extra-virgin olive oil
    • ½ small yellow onion, diced
    • 2 cloves garlic, minced
    • 1 teaspoon smoked paprika
    • ½ teaspoon ground cumin
    • 1 medium tomato, diced
    • 1 (15-ounce) can black beans
    • 1 tablespoon lime juice, from about ½ lime
    • Kosher salt and black pepper

    Instructions

    1. In a medium saucepan, heat the olive oil over medium heat. Add the onion and sauté for 5-7 minutes, until onion is soft and translucent.
    2. Add the garlic, smoked paprika and cumin, and cook for an additional minute, until fragrant. Stir in the tomato and black beans (do not drain). Simmer for 10 minutes, stirring occasionally, to bring all the flavors together.
    3. Remove from heat and stir in the lime juice. Adjust seasonings to taste and serve immediately.
