    This pineapple ginger beer mocktail is so delicious you won’t even miss the alcohol. It gets its unique flavor from a spiced simple syrup made with cinnamon, star anise, ginger and cloves.

    This pineapple ginger beer mocktail is so delicious you won’t even miss the alcohol. It gets its unique flavor from a spiced simple syrup made with cinnamon, star anise, ginger and cloves.

    Ingredients

    For the spiced simple syrup:

    • 1 cinnamon stick
    • 1 star anise
    • 2 whole cloves
    • 1 (2-inch) knob ginger, sliced
    • 1 cup water
    • ¾ cup sugar

    For the mocktail:

    • 1 ½ ounces pineapple juice
    • 1 ounce fresh lime juice
    • ½ ounce spiced simple syrup (recipe below)
    • 2–3 ounce ginger beer
    • Ice (a lot)

    Instructions

    1. To make the simple syrup, combine the cinnamon stick, star anise, cloves, ginger and water in a small saucepan. Bring to a simmer over medium heat and let simmer for about 10 minutes. Scoop out the solids and stir in the sugar. Simmer, stirring, for about 5 minutes, or until the sugar is completely dissolved. Remove from heat and let cool slightly before transferring to an airtight container and chilling in the fridge.
    2. To make the mocktail, fill a cocktail shaker or mason jar with ice. Add the pineapple juice, lime juice and simple syrup. Shake for 30–60 seconds or until the shaker is frosty and chilled. Strain into a rocks glass filled with fresh ice. Top with ginger beer and enjoy!
