    Kielbasa and Cabbage Sheet Pan Meal

    This 30-minute kielbasa and cabbage sheet pan dinner is perfect for busy weeknights. Toss it all in a simple mustard vinaigrette and enjoy!

    Ingredients

    • ½ pound baby potatoes
    • 1 teaspoon smoked paprika
    • ½ teaspoon garlic powder
    • ½ teaspoon dried thyme
    • 1 small head green cabbage
    • 14 ounces kielbasa
    • 2 tablespoons extra-virgin olive oil, plus more for drizzling
    • 2 tablespoons red wine vinegar
    • ¼ cup Dijon or spicy brown mustard
    • 2 cloves garlic, minced
    • Kosher salt and black pepper

    Instructions

    1. Preheat the oven to 425°F. Line a large baking sheet with parchment paper and set aside.
    2. Prep the potatoes: Chop the potatoes in half, cutting the larger pieces in half again so all pieces are roughly the same size. Place on the baking sheet and drizzle with a bit of olive oil, then sprinkle over smoked paprika, garlic powder, thyme, salt and pepper. Toss together to coat evenly, then flip the potatoes cut side down. Place in oven and roast for 15 minutes while you prepare the rest.
    3. Prep the cabbage and kielbasa: Cut the cabbage in half through the root and discard any brown outer leaves. Remove the root and core, then chop into 2-inch pieces. Cut the kielbasa into 2-inch pieces and set aside.
    4. Make the mustard vinaigrette: In a small bowl or measuring cup, whisk together the olive oil, red wine vinegar, mustard, garlic (if using), salt and pepper.
    5. Toss together: After 15 minutes, remove the potatoes from the oven. Add the cabbage and sausage to the baking sheet, then drizzle over the mustard vinaigrette and toss everything together to coat evenly. Redistribute everything in a single layer and return the baking sheet to the oven for an additional 10-15 minutes, or until cabbage has softened.
    6. Scoop into bowls and serve with a little extra mustard on the side if you want to get crazy.
